Adam's Role
Adam Kelly is head butcher at Jaworski Meats. He's been behind our counter for years, working alongside Mark Jaworski to keep the shop running on the same standards Fred set in 1935.

Why a Collective
Most people see meat in two states: alive in a field, shrink-wrapped in a grocery cooler. The work between those two states — the cutting, smoking, grinding, casing, aging, blending — is invisible to anyone who hasn't worked behind a counter.
A collective makes the work visible. Multiple butchers from multiple shops in multiple countries means you see the breadth of the trade, not just one shop's style. That's the value, and that's why Adam posts there.
